Ingredients
Instructions
- Set the Instant Pot to Sauté mode and heat the butter before adding the cumin seeds. If they start to pop, that's a good sign!
- Add the minced garlic and stir continuously to prevent it from sticking or burning.
- Add the chopped tomatoes, followed by the turmeric, ground ginger, salt, and optional Kashmiri red chili powder or cayenne.
- Continue stirring for approximately 2 minutes before adding the rinsed toor dal and curry leaves.
- Add 4 cups of water and stir thoroughly to combine.
- Set the Instant Pot to Manual/High Pressure, secure the lid, set the valve to the sealing position, and cook for 5 minutes.
- Once the cooking cycle finishes, turn off the Instant Pot. Allow the pressure to release naturally for 5 minutes before carefully releasing the remaining pressure manually.
- Open the lid and stir in the baby spinach for approximately 2–3 minutes.
- At this point, you're basically done! Feel free to add cilantro and/or lime if that's your thing, and serve with rice or your flatbread of choice, like roti or even tortillas, lol. Enjoy!
