Ingredients
Instructions
- Preheat your oven to 375°F and prepare a muffin pan with liners or a nonstick surface.
- In a large bowl, combine the dry ingredients: all-purpose flour, sugar, salt, and baking powder.
- In a separate bowl, mix the wet ingredients: applesauce, milk, and vanilla extract. The applesauce replaces the eggs and oil in this recipe!
- Gradually combine the wet and dry ingredients, mixing until incorporated.
- The batter should be scoopable, but not too runny or thick like dough. If needed, add a little flour or milk at a time until you reach the right consistency.
- Gently fold in the blueberries. We used frozen blueberries since that's what we had on hand!
- Fill the muffin cups with batter and sprinkle a little of the reserved sugar on top of each muffin.
- Bake for 15–20 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs but no wet batter.
- Allow the muffins to cool before serving, and enjoy!
