Mint Chocolate Chip Cookies

Mint Chocolate Chip Cookies
Yield: 30
There's nothing quite like home-baked cookies, especially when you put a small twist on a classic. We took traditional chocolate chip cookies and mixed in some Andes mint chocolates for an easy, elevated flavor that feels both familiar and fresh. The result is a soft, cozy cookie with just the right hint of mint, proving that sometimes the simplest upgrades make the biggest difference.
Ingredients
Instructions
- Preheat the oven to 350°F.
- Microwave the butter for approximately 30–45 seconds, until melted but not hot.
- In a bowl, combine the melted butter, granulated sugar, and brown sugar, stirring until well mixed.
- Add the vanilla extract and egg, stirring until fully incorporated.
- Add the flour, baking soda, and salt to the same bowl. Mix until combined. The dough should be soft and slightly sticky.
- Stir in the semisweet chocolate chips and Andes Crème de Menthe baking chips, mixing until evenly distributed.
- Roll the dough into approximately 1-inch balls and place them on a baking sheet, spacing them about 2 inches apart. Use parchment paper for easier cleanup.
- Bake for 7–10 minutes. The cookies may look puffy and slightly underbaked, but that's okay!
Notes
We made a batch large enough to spread across two baking sheets. When baking both sheets simultaneously on two oven racks, we increased the baking time and switched their positions partway through for more even baking. The total baking time was approximately 15 minutes.
